Oh my gosh I am so excited! Today has been a chill day studying, doing some yoga and all of sudden I had a craving to cook. So, I promptly grabbed my bags and headed to Trader Joe’s, Ralph’s, and Whole Foods in that order! I live right by all three so why not take advantage of them? I know it sounds extreme to go to three different stores, but I literally couldn’t find all the ingredients in one place.

Well, what do you think I am making? Drumroll…

MACARONI AND CHEESE AND PEANUT BUTTER FUDGE.

This is so awesome! My inner fat child gloated. I was absolutely stoked.  You know what is even better? They were both VEGAN! I have tried vegan mac and cheese multiple times and I have finally succeeded. The ingredients were all natural and no extra sugar was added to the fudge. Check out the recipes below.

Vegan Macaroni and Cheese:

CYMERA_20130802_1920031 cup (more or less) of cashews

Any amt. of water you want for consistency

2 tablespoons of Dijon mustard

2 cloves of garlic

1/4 cup of nutritional yeast

Blend the ingredients above in a blender and add other seasonings to your taste. The mixture will serve as the “cheese” sauce. The nutritional yeast does some magic of some kind creating a cheese-like, creamy taste and texture.

Broccoli Florets

Mushrooms

Pasta

Fold the broccoli and the mushrooms into the pasta along with the cheese sauce and bake! Whoooo!

Vegan Peanut Butter Fudge 

CYMERA_20130802_1959071 cup of peanut butter

1/4 cup of coconut oil

2 tablespoons of raw honey

1/2 teaspoon of salt (I forgot to add this)

Dark chocolate chips

Mix all ingredients together in a bowl and pour into a dish. Freeze for an hour and then cut them into bite sized pieces! YUM.

 

This is crazy! It tasted so good! The macaroni and cheese was creamy and hit the spot. No, it wasn’t cheesy, ooey, gooey awesomeness but hey, it was pretty darn close! It was also healthy which was even better. It was good to lips and good to my hips. I have some left over for friends and for me to munch in the coming days. So, all is well! Try out these for yourself. You will love it!
